Do I really need to say anymore? ๐ Keto/low carb, but also gluten free, slimming world friendly and suitable for those following weightwatchers, this recipe does it all. I came up with it when I forgot to do a food shop and had only a few ingredients in the fridge. It’s SO easy and loads of you tried this as soon as I posted it on my stories... what a total hit ๐ฅฐ Omit the sugar or replace with sweetener if you’re strictly keto, and use the cheese sparingly if you’re following a lower fat diet. It’s also completely delicious without cheese. I served this with a simple salad but it’s great with potato salad/chips or even just some roasted veggies for a complete low carb meal. It takes minutes to prepare and the oven does the rest. You need to try this! Recipe is below and in my highlights. Enjoy ๐ค

Serves 5-6. You will need:
1kg chicken breast, sliced in to steaks
2 tbspn oil
1 tspn paprika powder (not smoked)
1 tspn dried oregano
1 tspn (heaped) onion powder
1 tspn (heaped) garlic powder
3/4 tspn chilli powder (or to taste)
1 tspn sugar
1 tspn black pepper
Juice of 1/2 lemon
Salt, to taste
Handful of grated cheese (I used mozzarella)

1. Lay chicken in a lined baking tray and add oil and all the herbs, spices and seasonings. Mix thoroughly so each piece of chicken is fully coated in the marinade. Spritz over lemon juice and mix again.
2. Lay evenly in one layer on baking tray and bake at 180°C for 20-25 mins, turning half way, until the chicken is just slightly undercooked. Remove from oven.
3. Place half of the chicken steaks in an even layer at the bottom of an oven proof dish. If there are juices left at the bottom of the baking tray then pour over the steaks. Sprinkle over half of the cheese, and place another even layer of steaks over the top. Sprinkle with more cheese.
4. Place back in the oven for 10-15 mins until the cheese is melted and the chicken is fully cooked through. Serve hot.
