CHEESEY CHICKEN STUFFED PEPPERS

The sun’s out and it makes me crave these stunningly light and yummy stuffed peppers 🥳 They’re low carb, keto, gluten free and slimming world friendly, and they make the perfect little light starter or main course served along side a crisp green salad. I don’t know about you but any time I’ve seen stuffed peppers on a menu, it’s usually a bland vegetarian option full of couscous and a few herbs.. my recipe is a million miles away from this and it’s genuinely a taste sensation full of robust flavour and lots of oozing melted cheese 😊 Give them a try, recipe is below and in my highlights. Serves 6. You will need:
6 bell peppers, halved length ways
1-2 tbspn oil (or spray oil)
My ‘everyday spiced mince’ or any seasoned meat of your choice
100g shredded mozzarella (or cheese of your choice)

1. Slice bell peppers in half, length ways and remove the seeds.
2. Drizzle/spray with oil.
3. Season with salt and roast at 180° for 10 mins.
4. Remove from oven and stuff with my ‘everyday spiced mince’ (recipe coming up in next post) or any seasoned meat of your choice.
5. Top with cheese and and bake again at 180° for 5-10 mins till cheese is bubbling and golden. Serve warm with salad.
