I made these today for some family and boy oh boy did you guys go a little wild for them on my stories! It’s such a simple recipe and it tasted soo yummy, I just have to share it with you! I whipped these up in a rush this morning and left them to set in the fridge till I was ready to serve and they tasted divine. Serves 6. You will need:
240g plain milk chocolate
360g plain cream cheese
1 tspn vanilla extract
6 tbspn icing sugar
100ml double/whipping cream
9 digestive biscuits (or any preferred plain biscuit)

1. Over a double boiler, melt the chocolate. To do this, pour a little water in to a small saucepan and bring it to a simmer on the hob. Place chocolate in a bowl and place the bowl over the top of the saucepan, ensuring the bowl is bigger than the saucepan so it doesn’t touch the water. Let the chocolate melt gently.
2. While the chocolate melts, add cream cheese, vanilla and whipping cream to a clean mixing bowl and beat well with an electric mixer till it becomes thick and luscious and holds its shape on the whisk.
3. Add sugar and mix again till incorporated.
4. Once the chocolate has melted, add it to the cream cheese and beat again till the mixture lightens in colour.
5. Now crush one biscuit in to the bottom of each serving glass and gently top with two serving spoons of the chocolate mixture. Smooth with the back of a spoon.
6. Crush half a biscuit over the top of each, refrigerate for at least 2 hours to set and serve cold.
