You all voted to see my ‘everyday spiced mince’ recipe on my stories so here it is! It’s such a versatile and easy recipe that can be served with rice/naan, stuffed in to pittas, added to pizzas (check out my last pizza post!), stuffed in to veggies (see my last post on stuffed peppers), sprinkled in omelettes, and added to cheese toasties... the list is endless 🥳 It’s a brilliant recipe to batch cook at the beginning of the week and keep in the fridge on hand for healthy meals throughout the week. The best part is it’s really quick and adds a protein boost to just about anything. Low carb, keto, gluten free and slimming world friendly, it’s one of my favourite recipes to have up my sleeve for a busy week ahead. Try it out and see for yourself! You will need:
400g chicken mince
1 onion, chopped
1 tspn salt (or to taste)
1 tbspn chopped garlic
1 tbspn chopped ginger
1 tbspn chopped chilli (or to taste)
Handful chopped tomatoes
1 tbspn tomato purée
1 tspn black pepper
1 tspn cumin powder
1 tspn coriander powder
1 tbspn finely chopped fresh coriander
Spritz of fresh lemon juice

1. Fry onion on medium heat in a spoon of oil/spray oil until translucent. Season with salt.
2. Add ginger, garlic and chilli and fry for a couple of mins.
3. Add mince and stir to break up any lumps. Cook for a couple of mins.
4. Add tomato purée and chopped tomato and stir through.
5. Add black pepper, cumin powder and coriander powder and cook on medium heat until mince has fully cooked through (around 20 mins). 6. Once cooked, check and adjust seasoning, add fresh coriander and lemon juice. Serve with anything from rice, to pittas, stuffed in to peppers, topped on pizza.. it’s good for just about anything and is a great fridge staple!
