3 INGREDIENT LOW CARB MUFFIN CUPS

Now that summer is truly in sight it’s time for some fat shedding recipes that are easy to make but still incredibly tasty. I was craving something yummy but didn’t fancy loading up on carbs (who even am I?!) so I came up with these undeniably delicious cheesey smoked salmon muffin cups which are not only #keto and #lowcarb but also #slimmingworld friendly. What more does a girl or guy on a health kick want? 3 ingredients and 5 minutes for prep is all you need for days of nutritious breakfasts and snacks on the go. You can swap out the salmon for shredded chicken if you prefer, and you can even add some veggies for added crunch and nutrition (asparagus would be lovely as well as peppers or some spinach!). It’s the perfect #ketomealprep recipe for people in a time crunch. There’s nothing worse than an attack of the munchies with nothing nutritious on hand when you’re trying to be healthy, so don’t get caught out and try these out now! Makes 12 muffins. You will need:
13 medium free range eggs
100g smoked salmon, chopped in to small strips
12 tbspn grated cheese

1. Whisk eggs in a large bowl and season with 3/4 tspn salt (or to taste) and 1/2 tspn black pepper.
2. Lay a few strips of smoked salmon at the bottom of each muffin mould.
3. Layer 1 tablespoon of grated cheese on top of the smoked salmon.
3. Pour the whisked eggs in to each mould on top of the cheese and salmon till the mould is full.
4. Bake at 180° till eggs are set and the muffins come away from the sides of the mould (around 20 mins - be careful not to overcook. Insert a knife in to the middle of a muffin to check they are cooked. The knife should come out clean.)
