Summer is in full swing (although it’s a bit temperamental here in Scotland!) and there’s nothing more refreshing than some sweet and juicy watermelon 🍉 Pair it with tangy feta cheese and some greens, and you’ve got yourself a beautifully vibrant salad to sit on your next BBQ table. Something wonderful happens when you bring sweet, salty and sour/tangy flavours together, it’s an undeniably brilliant combo. This salad is so simple to prepare, I can’t even call it cooking! Serves 4-6. You will need:
1/2 ripe watermelon, sliced thinly and cold from the fridge
100g feta cheese, crumbled
Large handful walnuts, finely chopped
Large handful fresh spinach or mint, finely chopped

Arrange the watermelon slices on a serving plate and scatter over the crumbled feta followed by the walnuts. Top with chopped spinach and/or mint and serve on a hot day!
