NO BAKE CHOCOLATE OAT BARS

A delayed post today but this recipe has been a hit with you all on my stories! So I was craving lots of sweet during my pregnancy and I was forever looking for easy and quick ways to get my sugar hit without leaving my house to go to the shops (lol). So I decided to whip up a batch of my store cupboard no-bake chocolatey oat bars, perfect for someone with little patience for sweet dishes like me. They’re super easy and the prep takes 15 minutes before leaving in the fridge to set. Easy or what! I’m bringing you two fillings for this, one that’s not very sweet and one that’s for the chocoholic sugar addicts that lives in most of us. Take your pick and make these when you can. They’re ideal for friends, guests and greedy pregnant/emotional moments ๐Ÿค— Recipe is below and in my highlights.

Makes 9 large squares. You will need:
200g butter
100g brown sugar
1 tspn vanilla extract
180g oats
100g (+ 2 tbspn optional) desiccated coconut (unsweetened)
120g almond butter
100g dark chocolate if you don’t have a very sweet tooth (or for a sweeter option instead use 290g plain chocolate spread)

1. On medium heat in a saucepan melt butter and mix in the sugar and vanilla extract.
2. Add oats and 100g coconut and mix well. Cook on low/medium heat for a few mins.
3. Line 9x9” baking tin with parchment paper, leaving some paper hanging over the sides.
4. Push half the oat mixture in to the bottom of the baking tin and pack tightly.
5. Make the filling - melt the almond butter and chocolate (or chocolate spread) in a pan on medium heat. If using the chocolate spread then add 2tbspn coconut. Mix well till everything is smooth.
6. Pour the chocolate mixture over the oats (keep back 3 tbspn). Spread evenly with a spatula.
7. Crumble the remaining oats over the chocolate and pat lightly to sandwich the chocolate in.
8. Drizzle over remaining chocolate. Place in fridge for minimum 2 hours. Once ready, lift the parchment paper right out of the tray, cut the chocolate oats in to squares and munch ๐Ÿ˜Š
