So I experimented with chicken drumsticks last night and came up with a delicious and nutritious recipe for a slightly sweet, sticky and spicy Asian style main dish. Enter my honey soy chicken drumsticks with Asian style veggies and boiled rice 😊 It requires minimal effort and the chicken can be marinated ahead of time to make it even easier and faster. You can even swap out the drumsticks for wings or thigh/breast meat, just use whatever you like! The accompanying veggies are probably the easiest in the world and will taste awesome not only with chicken but with salmon (or any fish) and even steak. Makes 8-12 drumsticks (depending on size). You will need:
2kg chicken drumsticks (or your preferred cut of chicken)
1 tspn onion powder
1.5 tspn garlic (paste or freshly chopped)
1 tspn ginger (paste or freshly chopped)
100ml soy sauce
2-3 tbspn honey (to taste)
Salt and pepper (to taste)
2 tspn chilli flakes (optional to taste)
1 heaped tspn cornflour
1 tbspn oil
1. Mix all ingredients together with the chicken in a foil lined baking tray and marinate for at least 2 hours (but ideally overnight in the fridge).
2. Bake at 180° for 30-40 mins, turning half way, till chicken is cooked and glossy.
3. Serve with my Asian style veggies (below) and boiled rice.
Asian style veggies - serves 2-4. You will need;
2 carrots, sliced
1 pack fresh broccolini (or 1 small head broccoli), chopped
3 portobello mushrooms, sliced
2 tspn garlic paste (or freshly chopped)
1 tspn ginger paste (or freshly chopped)
3-4 tbspn soy sauce
1 tbspn honey
1 tbspn chilli oil (optional)
Combine all ingredients in a pan and cook (uncovered) on medium heat for 10-15 mins until veg is tender but still crisp, and the soy sauce/honey mixture has reduced in the pan. Serve warm with my honey soy chicken and boiled rice.
