To all my health conscious foodies out there, this one’s for you! Check out my deceptively delicious courgette pizza boats that can fit any health/diet plan you choose 😊 Packed full of fibre and nutrition, these make the perfect little vegetarian side dish to a meaty main course. They also make a lovely light veggie main course, and can even be made for carnivores by adding shredded chicken/steak. Super fun, easy and flavourful, they’re ready in 30 minutes and are a delight to eat. Kids will love them too! The recipe is suitable for a low carb diet but can also be made lower calorie by using spray oil and low fat cheese. I can’t wait for you to try these, I guarantee you’ll be pleasantly surprised! Serves 2. You will need:
2 courgettes
8 tspn pizza sauce
Toppings of your choice (eg. Mushrooms, onions, olives)
10-12 tbspn shredded mozzarella
2 tbspn dried oregano
8 tspn oil
8 baby plum tomatoes, sliced in to thirds
1. Split the courgette in half, lengthways
2. Lightly scoop out the inside of the courgettes, leaving a groove for stuffing.
3. Fry the inside of the courgette with onions, mushrooms (or any toppings of your choice). Season with half the oregano and salt/pepper.
4. Rub 2 tspn oil over each courgette half and spoon 2 tspn pizza sauce evenly down the middle of each half.
5. Stuff with the toppings cooked in step 3.
6. Top with slices of baby tomatoes and scatter cheese over the top.
7. Bake at 180° for 20 minutes or until cheese is melted and golden.
