What can I say about this one folks, other than you want this in your belly now! It’s a much requested recipe by all of my followers, and to road test it I served it up to some beautiful friends who cleaned their plates up very quickly.. the sign of a good recipe! It’s so unbelievably easy, anyone can do it. You can also get your kids involved as there’s no cooking required. If you don’t like Oreos, swap them for cookies (🤤) or any other biscuit of your choice. It’s incredibly rich and decadent so forget the diet for this one and just indulge. Serves 6 large portions. You will need:
360g full fat plain cream cheese
150ml thick double cream
1/2 cup + 2tbspn icing/powdered sugar
3 packets (462g) Oreo biscuits
1.5tspn vanilla extract
75g butter, melted

1. Thoroughly mix up the cream cheese, cream, icing sugar and vanilla with an electric mixer (or you can do so by hand).
2. Crush up one packet (154g) of Oreo biscuits with a rolling pin. Keep some bigger chunks for texture. Add to the cream mixture and mix till thoroughly combined. Set aside.
3. In a food processor whiz up 2 packets of Oreo biscuits (308g) till they become fine crumbs with no chunks. Then place them in a clean bowl and pour in the melted butter. Mix well so all the crumbs are fully coated. It will look clumpy.
4. Assemble now. Put 2 spoons of crumb mixture in to the bottom of a glass or ramekin and press down firmly with the back of a spoon. Then layer on 2 spoons of cream mixture and spread evenly before adding another spoon of crumb mix. Repeat another layer of cream mixture and finally lightly sprinkle a spoon of crumbs over the top.
5. Refrigerate for at least an hour, preferably 3-4 hours so it sets and serve straight from the fridge. Yum 😋
