By popular demand I bring you my recipe for these unbelievably easy and delicious lamb chops which are low carb and low fat but FULL on flavour. They’re made in one pot and require such little effort.. just throw in a few spices and leave them to cook on the hob for an hour or so and they’re ready. Serve with potatoes and salad and you’ve got yourself a meal fit for a queen πΈπΌ You need to try this! Recipe is below and in my highlights. Enjoy π€

Serves 6-8. You will need:
1.5kg lamb chops
2 green chillies, chopped
1 onion, chopped
3 tspn coriander powder
3 tspn cumin powder
2.5 tspn garlic powder
2 tspn onion powder
1.5 tspn chilli powder (or to taste)
2 tspn salt (or to taste)
1.5 tspn black pepper
5 cloves of garlic, chopped
1.5 lemons, quartered
2 tbspn butter
3 tspn fresh coriander, chopped

1. In to a large pot, place the lamb chops along with 2 cups of cold water and turn the heat to medium.
2. Add the onion, chilli, garlic, spices and lemon. Now turn the heat down to medium-low, cover and cook for around 1hr 15mins until the meat is tender. Check every 15 mins to ensure nothing is burning. You may need to top up the water also if it’s looking dry.
3. After 20 mins, turn the chops over to ensure they are coated fully in the seasoning.
4. After another 20 mins take the juices from the bottom of the pot and baste the chops to keep them succulent and flavourful. Cover again and finish cooking.
5. When the cooking time is up, remove the lid and boil off most of the remaining liquid. Keep a few tablespoons of liquid in the pot but boil off enough so it’s thick (not runny). The meat will be very tender at this point so handle with care.
6. Add the butter and chopped coriander and serve with some of the juices drizzled over the top.
